Whenever we were on holiday here in Sweden and saw räksmörgås or räkmacka on the menu, we knew what to take: a prawn sandwich! It’s always delicious and easy to make, we discovered. It’s a great dish to surprise your guests with. We already made it for family and friends. It’s always fun to see how people are going to eat it!
4 prawn sandwiches
About 1 kg peeled prawns
4 slices of white or brown bread
1 crisp salad or green salad
4 hard-boiled eggs
2 cup mayonnaise (preferably homemade, see below)
dill
1 lemon
Mayonnaise
2 yolk
1 teaspoon Dijon mustard
1 1/2 cup canola oil
salt and black pepper
- Put the prawns in a colander and drain well.
- Spread bread slices.
- Add lettuce leaves to the bread.
- Mayonnaise: In a bowl, beat together the egg yolks and mustard. Add the oil dropwise while whisking. Season with salt and freshly ground pepper (or just use mayonnaise from the supermarket).
- Spread mayonnaise over salad. Top with the prawns and add some mayonnaise on top.
- Peel, slice and add one egg on top of the mayonnaise and shrimps.
- Garnish with dill and a slice of lemon.
We love it! Also nice to make when celebrating love with family, friends or just the two of you!
